The Sinfully Sweet Apple Company, located in Upland, California, is the maker of gourmet caramel apples and treats. The company produces and distributes more than 150 different kinds of gourmet apples and are creating new gourmet apple treats daily. What makes the company different is their caramel. Gordon’s Gourmet is the manifestation of a Chef’s interest in new and exciting products, and his motivation to share these products with chefs everywhere. President and CEO Gordon Buchsbaum’s story begins when he was just a child, sitting on his mothers counter observing her cook. He describes her concocting wondrous recipes, and involving him in the process as he got older. At just thirteen, he furthered his interest by taking his first part-time job working for a local caterer on the weekends doing prep and helping with parties. This is when he realized that cooking was his calling. By the time he graduated from high school, he had maintained a job as a line cook in an upscale American restaurant, and decided he wanted to pursue his calling further. He attended Johnson & Wales in Providence, R.I., a University that specializes in the Culinary Arts and whose alumni consists of several culinary phenomenons, including Gordon Buchsbaum.
After 25 years in the Food service and Hospitality industry, Buchsbaum established Gordon’s Gourmet in 2011. Throughout his travels and experience, Gordon had accumulated a wealth of knowledge about his trade, and he wanted a way to represent new, unique, and adventurous products. “I first tasted Caviaroli on a trip to Spain; to have what I believed was the best meal of my life at El Bulli. The risks that Ferran Adrià took with food made me fall in love with being a Chef all over again”. When Buchsbaum returned from his journey to Spain, his journey into molecular gastronomy, a new direction in food, began. Gordon’s interest in Caviaroli led him to to partner with the company and bring this product to The United States, sharing it with anyone who enjoys cooking.
Caviaroli is fine Spanish olive oil that is encapsulated to mimic the delicate refinement of caviar. The concept transpired back in 2008 when Ferrán Adrià created this innovative product and produced it in small quantities, inspiring others to take part in this surprising enterprise. Pere Castells, technical director of Fundació Alicia, introduced olive oil caviar to the Caviaroli team and helped begin research on production.
For two years, the team worked enjoyably at mastering the technology which initially was a challenge. Finally, the first olive oil caviar was created outside of El Bulli’s kitchen, and soon it was presented to Ferràn Adrià, who promptly ordered 10kg in less than a week. Adrià considered this new caviar good enough to be served at El Bulli, the restaurant where he worked as head chef. He even presented the product in a lecture at Harvard, saying that “soon the olive oil caviar will be available,” and in jest added, “…but it can only be done with Spanish olive oil”, encouraging the use of quality grade Spanish products.
In 2011 at the Australian Fine Food’s Show, Caviaroli won “Best new Foodservice product award,” and in 2012, the production plant in Spain was registered and Caviaroli was approved by the FDA. Stored in a sleek glass bottle, the Caviar will stay fresh for up to twelve months–the same as regular bottled olive oil. In the early 1970s, Bill Odom, a poultry specialist for Campbell Soup Company in Sumter, SC, was offered a corporate position in New Jersey, as his husbandry skills were the best Campbell Soup had ever seen. Despite the lustrous offer, Odom declined, wanting to stick to his country roots and set out on his own. While raising Pharaoh Quail to train his hunting dogs in the Manchester State Forest, Odom realized there was a market for the farm-raised bird when he began selling his excess birds in the off season to friends and neighbors. The rest is history. Founded in 1974, Manchester Farms is the oldest quail producer in the United States. A second-generation, family-owned farm, Manchester Farms is now owned and operation by Odom’s daughter and her husband, Brittney and Matt Miller.
